Beet the System

I recently saw a t-shirt reading “Beet the System,” which could have many meanings in today’s world, but for us, we like to think that the “system” is non-organic, unhealthy, non-sustainable growing and eating. One company of course that comes to mind is Monsanto. As a company constantly trying to push chemical, GMO toxicity into our seeds, into our soil, and ultimately into our bodies, we say “no” as we provide just the opposite in our constant drive to “beet the system.”
For the last three days with our FMC single-row root digger from the 1950’s, we managed to harvest over 27,000 pounds of delicious, organic red beets! As the rains are generally only giving us three-day stretches of dry, we are in a very fast pitch to get our beets out of the ground. For those of you who follow the growing cycle closely, you might ask, “Why so late?”
This year, we are a little later than usual due to the incredible dry hot spell we had in late July/August when our beets went in the ground. These seeds didn’t get water to germinate until a little later, and so here we are once again working hand in hand with the natural elements. Our next push will be the Chiogga and Golden beets − truly a gift in flavor and color, both root and greens being part of the meal.
As we get closer to this, our sacred season of thanks, there are so many ways to reach out and touch community and undeniably the best way is through food. Healthy, pure and wholesome organic veggies are always part of the table and critical for the favorite recipes we share. Let’s get together in “beeting the system” as we can spend a little more time in the kitchen and give thanks for the harvest, passing it along to those in need!
