A Guide to Melon Varieties
There’s nothing quite like biting into a perfectly ripe melon on a warm summer day. Whether you’re new to exploring different varieties or you’re a longtime melon lover looking to try something new, this guide will help you make the most of the wonderful melon varieties.
Before we get into the good stuff, let’s clear up a bit of confusion about melon families. Muskmelons are the varieties with that lovely netted, bumpy skin and a sweet aroma that’ll make your mouth water when they’re ripe. Cantaloupe, Galia, and Goddess are true muskmelons. Honeydew, Canary, and Piel de Sapo are their smooth-skinned cousins from the same plant family, but they don’t have that signature netting or fragrance. Watermelon, on the other hand, is from a completely separate plant family altogether and is not related to muskmelons. Understanding these little differences helps explain why the varieties ripen differently and need different care when you’re storing them at home.
Cantaloupe
Round with prominent raised netting over a cream to light orange background, cantaloupe has an interior that ranges from pale to deep orange. This variety offers a sweet and aromatic experience with a slightly musky fragrance. The texture is tender and juicy with a honey-like sweetness that makes it a classic favorite. The netting should be prominent and the background color should be cream rather than green. The stem end should yield slightly to gentle pressure when it’s ready to eat.
Honeydew
With its smooth, pale green to creamy white skin and no netting, honeydew stands out with its pale green to white flesh and firm, crisp texture. This variety has a mild and refreshing taste with a clean, sweet flavor that is less intense than cantaloupe. It is wonderfully cooling and has a subtle floral note that makes it perfect for hot summer days. To know when your honeydew is ready, look for skin that has a slight give when pressed gently at the blossom end, and it should develop a creamy, pale yellow undertone when ripe.
Galia
Round with fine netting over a golden-yellow background when ripe, Galia melons have pale green to white flesh with a soft, juicy texture. This variety offers a delightful cross between cantaloupe and honeydew, providing tropical and spicy notes with intense sweetness. It’s aromatic like cantaloupe but with the refreshing quality of honeydew, making it a wonderful discovery for those who enjoy both varieties. Like cantaloupe, look for a sweet, fragrant aroma at the stem end and prominent netting with a golden background color.
Canary
Bright yellow with smooth skin shaped like a football, Canary melons have pale green to white flesh with a firm texture similar to honeydew. This variety offers a mild and sweet flavor. It’s less aromatic than cantaloupe but provides a pleasant, refreshing sweetness that’s perfect for those who prefer subtler flavors. When ripe, the skin becomes bright yellow and yields slightly to gentle pressure at the blossom end.
Goddess
Similar to cantaloupe with raised netting but often larger, Goddess melons feature a vibrant orange flesh. This variety lives up to its divine name with a rich, sweet, and intensely flavored interior that has an almost creamy texture. The exceptional sweetness makes it a standout choice for those who love bold melon flavors. Look for a fragrant aroma and prominent netting with a golden background to know when it is ripe.
Piel de Sapo
Large and oval-shaped with distinctive dark green skin marked with lighter green stripes or mottling, Piel de Sapo gets its name from the Spanish words meaning “toad skin.” The interior is white to pale green with a crisp and refreshing, mildly sweet flavor. This variety is trickier to judge for ripeness because it tends to be less aromatic; look for a slight softening at the blossom end and a subtle sweet aroma. The exterior may develop a slightly waxy feel when ready.
Mini Seedless Watermelon
Small and round with the classic dark and light green striped skin, these mini watermelons have bright red flesh. They provide a sweet and juicy flavor with that classic watermelon taste, but in a convenient size that is perfect for families or when you want just a taste of summer. To know when it’s ready, listen for a deep, hollow sound when tapped, and look for the spot where it sat on the ground to be creamy yellow rather than white or green.

Storing your melons properly helps maintain their quality and flavor. Whole, unripe melons can be left at room temperature to continue ripening. Once ripe, store them in the refrigerator for up to a week, with the exception of watermelon, which can be stored at room temperature until cut. After cutting, wrap melon pieces tightly in plastic wrap or store in airtight containers in the refrigerator. Most cut melons will stay fresh for three to five days, though they’re best enjoyed within the first couple of days.
There are so many delicious ways to enjoy your melons beyond simply slicing and serving them chilled. Try making melon agua fresca by blending chunks of any melon with a little water and lime juice for a refreshing drink. The classic Italian combination of cantaloupe or honeydew with prosciutto never gets old. Blend frozen melon chunks into smoothies or freeze melon juice in ice cube trays for flavored ice cubes. You can also combine different melon varieties with fresh mint and a squeeze of lime for a colorful, refreshing side dish.
There is always something new to discover in the world of melons, and exploring different varieties will help you find your favorites and expand your summer menu with fresh, delicious options! From the familiar comfort of cantaloupe to the attention-drawing Piel de Sapo, each variety brings a unique character to your table.
